Caramelized Onion Grilled Cheese Sandwich

My favorite way to order a grilled cheese is with added onions. Sometimes it's a few slices of raw red onion, sometimes it's onions cooked on a flat top griddle before they're added to my sandwich. If it's on the menu, caramelized onions are a definite. Sweet, buttery, almost like an onion jam, they just melt into the cheese. Yum!

Butternut Squash Bisque

Rainy days call for comfort food. Soup and grilled cheese. Not just any soup, a slightly sweet, mildly spicy, rich butternut squash bisque. This soup is velvety, creamy, and perfect for dunking a crispy, gooey, grilled cheese sandwich in. It's the classic grilled cheese and tomato soup all grown up. You can still justify the nap afterwards though; naps are definitely for adults too!

Asparagus and Chanterelle Mushroom Risotto

I love mushrooms. When I was a vegetarian they were often the center of my meal; grilled, sautéed, added to pasta dishes or soups. They have that great umami flavor that is so often missing from vegetarian cuisine. If you haven't tried replacing your burger patty with a nicely grilled portabello mushroom, some swiss cheese and maybe some caramelized onions for a mushroom melt, I recommend it!
